Amanita muscaria aka the fly agaric, probably the best-known mushroom - both for its stunning beauty as well as its psychoactive effects which are written well into history. But there’s another story here.
Amanita muscaria contains ibotenic acid, which is one of the few compounds known to produce an umami flavor when cooked (the others being monosodium glutamate - MSG, and guanosine phosphate, which happens to be found in the shiitake mushroom), and is said to impart a stronger savory flavor than either of these.
For those out of the loop, agents which impart an umami flavor generally don’t have much of a taste to their own - however, what they do is bring out the flavors of other foods, such as meats, imparting on them a savory, delicious taste. This is accomplished by binding to glutamate receptors on the tongue.
However, before you go about cooking and eating a bunch of A. Muscaria, know that ibotenic acid converts in the body to muscimol, which is responsible for the psychoactive effects of the mushroom, which many say are not very enjoyable. Thus, if you’re in it just for the taste, it’s best to eat a very small amount - or even just chew and spit!
Interesting side note - Amanita phalloides and other extremely toxic species from this family are said from those who have eaten them to be some of the most delicious mushrooms they’ve ever tried. These species likely also contain amounts of ibotenic acid, aside from the poison amatoxins that lurk inside!
